Location / Favorable Climate

We are located in the salmantina town of ‘Miranda del Castañar’ in the heart of the Sierra de France, historic-artistic site since 1973. The town is defined  by the silhouette of the medieval castle and the Bell Tower, its architectural value has a unique singularity and it is a compulsory viewing  over a tour through the area.  

From the top of the hill in which the town of Miranda is located you can gaze the precious ecosystem, exuberant nature with lots of chestnut trees that give its name to the village, olive trees, slopes, orchards and vineyards. This unique and natural environment along with the microclimate of the area will be decisive for drying, curing and for the highly concentrated aromas of our Iberian products.

We highlight the proximity of the Peña de Francia, highest point of the mountain range (1,729 m), where abundant snowfall determine the climate of its environment.

Long, cold and dry winters make us a privileged area for the drying of our traditional slaughters.
Pure and fresh air of the mountains in winter and high temperature in summer for the product to sweat, makes a unique natural setting with a perfect climate combination.

A long wait of drying and rest with temperature, humidity and ventilation controlled and consistent will culminate the process of the final product.
